Chocolate Mint Delights
Makes 2-3 dozen
A perfect holiday cookie.

Melt together butter, brown sugar and water in a medium sized pan. Stir occasionally. Add the chocolate chips and stir until melted. Let stand 10 minutes to cool. Add the remaining ingredients and combine to form a dough. Chill 1 hour. Roll the dough into walnut sized balls. Place on a lightly greased cookie sheet leaving ample space between the dough balls. Bake at 350 degrees for 8-9 minutes. Remove the cookies from the oven and place 1/2 an Andes mint on top of each cookie. Allow the mint to melt, then swirl the mint over the cookie with the back of a spoon or knife.Source: From a long ago newspaper article
