Creamy Cardamom Rice Pudding (vegetarian)

  1. Bring soy milk/coconut milk, rice and salt to boil in a saucepan. Reduce heat to medium-low. Simmer 15-20 minutes or until rice is tender, stirring frequently. Stir in sugar, vanilla raisins, almonds, cinnamon, cardamom. Cook 5 minutes until thickened. Remove from heat, divide among 6 dishes. Serve warm or cold, garnished with chopped almonds and sprinkled with rose water, if desired.
