herbs (chopped basil, oregano, parsley, cilantro...sage, rosemary, and fresh mint)
1/2 cucumber
1 red pepper
1/3c olive oil

Soak beans in water + 1 teaspoon salt, a few hours to overnight. Add all ingredients except herbs and cook 5+ minutes in insta-pot. Add chopped herbs to taste. Combine and serve cold or at room temperature.
