Family All-Time Favorite Cheesecake

This is a very large cheesecake.  The joy is that it serves a lot of people and there are usually leftovers to enjoy!  Our son, Adam, requested this as his birthday cake every year!  The combination of cream cheese and cottage cheese gives it both a lovely flavor and a light texture.  This could become your family favorite, too!

  1. Crust

    Combine crumbs, sugar and butter until well blended.  Press onto bottom and up the side of a springform pan.  Chill while preparing filling.

  1. Filling

    Beat together cream and cottage cheeses until smooth.  Mix in sugar, vanilla and salt. Separate eggs and gradually beat in egg yolks.  Gradually blend in flour.

    Beat egg whites until stiff but not dry and fold into cheese mixture.

    Pour into a 10" springform pan.  Bake 1 1/4 hours at 350, then turn off heat, open oven door and let cool in oven to room temperature.  Then chill.  (it is normal for cake to sink slightly in center).

    Delicious as is, but served with thawed or fresh berries is a great option.
