  1. Preheat oven to 350 degrees.  Saute mushrooms and onions in a small amount of oil until onions are almost translucent. If using frozen spinach cook it and drain well.

    Beat the eggs lightly and combine them in a bowl with the mushrooms, onions, artichoke hearts, spinach and cheese.  Add chopped bacon if you wish.

    Bake in a buttered, covered casserole for 45 minutes at 350. Serve with small boiled potatoes or hash browns.  Can also be used as the filling for two quiche crusts.
