1 butternut squash, med - large (peeled and cut into 1" cubes, about 4 c)
1lb carrots (cleaned and chopped into 1" pieces, 7-8 carrots)
1 apple (peeled, cored, chopped into 1" pieces)
1/2 yellow onion (peeled, cut in 1/2, root end attached)
3cloves garlic (with skins)
2Tbsp extra virgin olive oil
1/4tsp black pepper (freshly ground)
3/4tsp yellow curry powder
1Tbsp raw honey
3tsp fine sea salt
1qt broth (veggie or chicken)
1/2tsp ginger (ground)
raw pumpkin seeds (garnish)
cumin (to taste)
coriander (to taste)
Instructions

Put all ingredients in a pot and cook until all vegetables are soft. Add cumin and coriander to taste. and more salt if needed. If a smooth texture is desired, put in a blender and puree.
