Herb Roasted Turkey Legs

You can use other cuts of turkey too, such as thighs or breasts, but then brining and baking times will vary.  Have fun experimenting!

  1. Brine

    Combine all brine ingredients (water, honey, salt, pepper, rosemary, lemon thyme, and bay leaves) in a large pot. Heat only enough to combine ingredients while stirring. Remove from heat and cool to room temperature.  

     

  1. Turkey Legs

    Place turkey legs in the brine and refrigerate.  Let meat marinate for 6 + hrs.

    Preheat oven to 350 degrees.  Rinse and pat dry turkey legs.  In a small bowl combine olive oil and seasonings (garlic powder, onion powder, rosemary, thyme, and pepper).  Take each leg and gently separate skin from the meat.  With a basting brush, brush some of the oil mixture onto the meat and then onto the outer skin as well.  Place the turkey legs on a wire baking rack over a baking pan and place in the oven. Bake for about 45 minutes. Turn over and cook another 45 minutes (or until the center of the meat reaches 180 degrees on a meat thermometer).  Serve and enjoy!
