Clara and Lil were sisters and second generation immigrants. Clara always brought her wildly popular kolatchen to our Polish clan’s annual reunions. After she passed I asked Aunt Lil for the recipe and she gave me this one. I can’t believe that it’s an authentic Polish recipe they learned from their mom, my grandma Magdalena, but it tastes pretty darn good anyway. Maybe Clara followed this recipe, maybe not, but it’s the one I use, and it’s still wildly popular.
Mix butter, flour, cream cheese and salt as for a pie crust till it holds together. Chill for at least a couple hours. Roll out with flour and powdered sugar. Cut dough into small squares, fill with Solo fruit filling and fold. Bake at 350 degrees for 10-15 minutes. They should be a light golden brown. Sprinkle with powdered sugar when cool.
This recipe can easily be made vegan with vegan butter and cream cheese.
