Place chocolate and butter in pan to melt. stir occasionally until melted and smooth. Remove from heat.
In mixing bowl combine sugar and eggs and salt. Beat on high speed for 4-5 min. or until mixture is thick and pale. When whisk is lifted, the batter is run back and forth over itself, it will hold a slowly dissolving ribbon.
With mixer on low speed, sprinkle flour over batter and mix until combined. Fold egg mixture 1/3 at a time into chocolate mixture. Fill ramekins with batter to 1/4 in. from the top.
Bake on lowest level of oven at 400 degrees. butter 5 (6oz) ramekins. Bake 8-10 minutes until sides of cakes are firm. Centers will be soft to the touch, but set. Let stand 1 minute then un-mold.
