Luke House Beef Stew
This is one of those recipes that you can’t go wrong with. Change the vegetables or add more liquid, if you like. - It will taste great as long as the meat is tender and the vegetables are done.

Brown the meat in oil, add onions toward the end of browning. Add tomatoes, carrots, rutabaga or parsnips. Add beer, balsamic vinegar, garlic and thyme. Cover and simmer until meat is getting tender, then add potatoes. Cook until potatoes are tender. If desired, crush a few potatoes into the broth to thicken it. Works well with a slow cooker (4-6 hrs) or pressure cooker (14 minutes).
