Magical Marvelous Blueberry Pie

Crust
Preheat oven to 400°. Butter deep dish 9" pie dish. Mix crumbs with melted butter and ginger. Press into pie plate and bake 10 minutes until slightly browned.

Filling
In medium saucepan, mix 1 quart blueberries, sugar, corn starch, lemon juice, and cinnamon. Stir constantly until boiling and clear liquid appears. Remove and cool slightly. Add 1 more quart of blueberries gently but thoroughly, folding into cooked mixture. Pour into pie shell.

Topping
Whip 1 cup heavy cream and slowly add 1 tablespoon sugar. Before whipping is complete, add 1/2 teaspoon vanilla, (optional 1 tablespoon cointreau, Grande Marnier etc), then continue beating until whipped. Spoon whipped cream around edge of pie. Chill for at least 3 hours.
