Mary Fran’s Sweet Potato Casserole

  1. Mix sweet potato, 2 tablespoons brown sugar, 1/3 cup butter.  Beat in eggs and milk as needed.  Pour into a 2 quart casserole.

    Topping: Combine coconut, brown sugar, and pecans. Melt the remaining 2 tablespoons butter and stir into nut mixture.  Sprinkle over the potatoes.  Bake at 325 degrees for 1 hour. Can make ahead and put in the refrigerator until ready to bake.  Increase cooking time.
