Potato Kale Soup

Saute onions and garlic in a large pot until onions are translucent. Add potatoes with water to cover them about 4". Bring to a boil and cook, covered, until potatoes are about 3/4 cooked. Add kale and cook uncovered, until the potatoes are done (10 - 15 minutes.) Puree soup in a food processor or blend with an immersion blender. Season with pepper and serve.
