Tortillas
I usually make half of the recipe at a time. Grilled sliced peppers, mushrooms, zucchini, shredded cheese and meat will make this a meal.

Mix together flour, salt, and baking powder. Make a well and pour in 1/4 cup oil or melted margarine. Mix in with a spoon. Add 1/2 cup warm water and mix again. Next, add about 3/4 cup more warm water or enough to knead it into bread dough consistency. Let it rest for about 5 minutes.
Form into balls about 1 1/2 inch in diameter and dip each ball into flour before rolling it out very thin on floured board.
Cook on a hot griddle until bubbly and brown-flecked on each side. This won't take long - only a few seconds on a really hot griddle.
They are best served right away, but can be stacked under a damp cloth and reheated later.
