
Twice Baked Sweet Potatoes

Bake the sweet potatoes at 400 degrees for 1 hour. Cool for 30 minutes, then peel and mash adding 3 Tbsp butter to them.
Mix the eggs, soy milk, maple syrup, salt and vanilla together. Add this mixture to the potatoes and mix thoroughly.
Put in a casserole dish and top with the mixture of flour, brown sugar, 4 Tbsp melted butter and pecans.
Bake at 325 degrees for 35 minutes.
